Michael Heim
Founder + Owner, Ensō Farm and Forage | Co-Founder + COO, MyCOLove FarmMichael Heim has been hooked on Fungi since the very first time he ever went morel hunting in 2008. As an avid mushroom enthusiast, he has a longtime member of the Colorado Mycological Society (2010), serving in a variety of positions; board member, president, and editor. For twenty years, he cut his teeth in the restaurant industry, fueling his appetite for all things wild and propelling him to start his own mushroom foraging and education company Enso Farm and Forage in 2015.
Every summer, Michael guides culinary forays in the Rocky Mountains, and teaches people the wonders of mycology. He is also one of only a handful of Wild Mushroom Expert Certificate holders recognized by the Colorado Department of Public Health & Environment, allowing him to sell wild foraged mushrooms to Colorado restaurants and markets alike.
Ranging from big commercial operations, to small-scale Community Supported Agriculture (CSA) along the Front Range of Colorado, to consulting on a burgeoning food forest along the southern coast of Sweden, his experiences in the field are as diverse as fungi itself. Michael’s passion for plants and mushrooms is steadfast and unwavering. He believes wholeheartedly what Hippocrates once said, “Let food be thy medicine and medicine be thy food.”
Michael co-founded MyCOLove, an organic mushroom farm and extract supplement company, with three others in 2021. He is stoked to be playing a part of this super exciting emerging industry, and to explore the virtues of mycology, nature, community, and science.
